Step 1: Making the Ras Malai balls

In a large pot, heat the milk until it comes to a boil. Add the lemon juice and stir well. The milk will start to curdle. Turn off the heat and let it sit for 5-10 minutes until the curd is separated from the whey.

Place a muslin cloth or cheesecloth over a strainer and strain the curdled milk. Rinse the paneer under cold water to remove any lemony flavor.

Place the paneer on a clean surface and knead it for 5-7 minutes until it becomes soft and smooth. Add the baking powder and cardamom powder and knead for another 2-3 minutes.

Divide the paneer into small balls and flatten them slightly. In a separate pan, add the sugar, water, and saffron and bring it to a boil. Add the paneer balls to the syrup and let it cook for 5-7 minutes.

Step 2: Making the milk syrup

In another pan, heat the milk until it comes to a boil. Add the sugar, cardamom powder, and saffron and stir well. Cook for 5-7 minutes until the milk thickens slightly.

Add the cooked paneer balls to the milk syrup and let it simmer for another 5-7 minutes. Turn off the heat and let it cool for a few minutes.

Step 3: Serving

Ras Malai is best served chilled. Garnish with chopped nuts if desired and serve.


  • Make sure to use full-fat milk for this recipe as it will give the Ras Malai a creamy texture.
